I thought I’d never find a truly healthy substitute for popcorn. Not that popcorn is so very unhealthy, but these are absolutely fabulous! They store well and are a great snack to take to the office. And they are easy, easy to make.
1 bunch kale
1 – 2 Tbsp. olive oil
sea salt
1. Preheat the oven to 300 degrees.
2. Wash and de-stem the kale. Pat dry.
3. Tear the kale into large bite-size pieces and place in a bowl. You want them large because they’ll shrink up as they bake.
4. Drizzle the olive oil over the kale, add the salt and then massage it in to the kale with your clean hands.
5. Lay the kale bites on a cookie sheet in a single layer. You’ll likely need to do this in two batches.
6. Bake the kale bites for ~20 minutes or until they are uniformly crispy but not burned.
These are wonderful straight out of the oven but keep until the next day. Once cool, you can transfer them to an airtight container.
